pronto - fettucine with cherry tomatoes, spinach and ricotta
I now oven roast cherry tomatoes all the time as it intensifies their flavour. If you have any leftover roasted tomato mixture, it tastes great with ricotta and spinach as a sandwich filling the following day.
I'm just about to make my way into the kitchen to put the dinner on, as I often make this pasta dish on Friday night. It's just so quick to put together.
